I was thinking along same lines as you. 😁. Had thought maybe someone had mentioned their method, along with their dehydrate efforts.

Maybe @Britesea has done???? Even tho she uses a freeze dry also...we'll see. 😊

I DO prefer using my freeze dryer for eggs- whisk the raw eggs, freeze them in oblong/square plastic containers to make little "pucks" that I can place on the tray (less risk of it sloshing over the edges!) and then powder them. Reconstituted and cooked, I find them indistinguishable from my fresh ones. BUT, I have done them in my excalibur, and they came out pretty good too, not QUITE as good, but very acceptable. For storage, I prefer putting them in a mason jar with a desiccant rather than an Oxy absorber, and using the vacuum sealer. I store them in the coolest spot I have - the water tank house. We used up the dehydrated ones in the first year, but I have some freeze dried that are about 4 years old now, and they were fine when I used some this winter. Now I'm trying waterglassing, because DS doesn't like scrambled eggs. So far, I have about 10 dozen in a couple of buckets.

The canned French onion soup isn't going to happen. Thinking of dehydrating the onions I bought. Not sure the size I want. I am thinking small diced pieces to grind into onion powder

Did you end up doing this?
I did. I dried a couple of pounds of baby Bellas. When I first put them in the dehydrator, I thought they smelled pretty strong, but after a couple hours the strong smell abated, and they dried out well. I put them in some glass jars and vacuumed them. I haven't used any yet so no review as to the finished product.

This morning I've got a bucket of okra to wash, slice and get loaded into the dehydrator.

6 lbs of diced onions in the dehydrator (in the garage!!!!)

Wife and cats don't appreciate the aromatics in the house after chopping. Windows open

Any advice on desiccant options? I am thinking about vacuum sealing the dehydrated onions and adding a packet
