What do I do with 6lbs of tomatoes!

Check nearby pick-your-own farms. There's one up here that sells Romas for 25 cents a pound over labor day weekend.

You can also make a jar or two of sauce at a time; just make a pot of sauce, jar up what you don't use right away, and boil the jars. It's a great way to keep leftovers and you don't have to do the whole 40-lb recipe at once.

I made a couple of jars at a time but I also took tomatoes as they ripened, ducked them in hot water then cold to make the skins peel, then tossed them in a freezer bag. Once I had a lot, I fired up the big pot and started cooking :D

Today white beans ar on my canning agenda. Gosh I have not canned in two summers :hide. I am feeling a little nervous, but I am sure it will be fine.
