Baking? What's that? :p :D Beyond bread, the only thing I'm baking is some Chex Mix~Spicey As You Like It.

Next year, I plan to have my own pumpkin canned or frozen for making my own pies.

Chocolate Crinkles are brownie-like cookies covered with powdered sugar.

Chocolate Crinkles
1/2 cup vegetable oil
4 sq. (4 oz. ea) unsweeted chocolate, melted***
2 cups sugar
4 eggs
2 tsp. vanilla
2 cups flour
2 tsp. baking powder
1/2 tsp. salt
additional powdered sugar for rolling

Mix oil, chocolate and sugar. Add eggs one at a time, blending well after each. Add vanilla. Stir in flour, baking powder and salt. Mix well. Cover and chill overnight.

Drop teaspoonfuls of dough into a bowl of powdered sugar. Roll in the sugar and shape into balls. Place on a greased cookie sheet 2 inches apart. Bake in a 350 degree preheated oven for 10-12 minutes. Don't overbake - they should be set. Makes 5 dozen.

***I use the following to substitute for the chocolate squares.
12 Tab. cocoa
4 Tab. oil (this is in addition to the 1/2 cup)


Cinnamon Crackle cookies
1/2 cup butter
1/2 cup shortening
1 cup sugar
1/2 cup brown sugar
1 egg
1 tsp. vanilla
1/2 tsp. almond extract
2 1/2 cups flour
1 Tab. cinnamon
2 tsp. baking soda
2 tsp. cream of tartar
2 tsp. nutmeg
1/2 tsp. salt
2 tsp. grated orange peel
additional sugar for rolling

In a large bowl cream butter, shortening and sugars.
Add the egg, vanilla and almond extracts. Combine dry ingredients in another bowl and wisk together to combine spices. Add to the creamed mixture. Mix in orange peel.
Roll into 1 inch balls and roll in sugar.
Bake in a 350 degree oven on ungreased baking sheets for 12-15 minutes. Makes 6 dozen.


We were gone most of the day, but I did manage to make Toffee bars and peanut butter cookie dough is in the fridge.

gluten free flours.

Whew,

Taking a break for a few...making goodies for the family guests coming for Christmas, they pile in cause I make a mean Prime Rib Roast in Rock Salt for Christmas Dinner every year...

So today DH took the 8 yr old, 17 yr old, our "adopted" friend and headed to the hills to get out of my way....James, my 10 year and I, stayed home and so far we've made:

Peanut Butter Fudge
English Toffee
Divinity
Spiced Walnuts

And we're off to town to get the rest of the fixings for Christmas Dinner! When we get home we're making Coconut Bon Bon's and Butter Balls. We may throw in some Almond brittle as well. James wants regular old Chocolate Chip Cookies and Magic Cookie Bars too...why not?
