What's for dinner?

last night was some chow mein noodles that Mom had made and put into the freezer and then since i wanted some meat with them i took some sloppy joes out of the freezer too and combined them. not quite goulash but close enough. :)

this morning since i wanted something more substantial for breakfast i did the same thing again but added some cottage cheese on top after they were warmed up. bingo! worked out well.

supposed to be making chili this weekend but we have plenty of food in the fridge and freezer so until we have more room back i won't be doing chili. all the peppers are cut up and in the freezer so they'll keep until whenever. about all i need to do is get some beans cooked at some point which also will take up some freezer space.

oh and Mom wants to make some more onion, mushroom and asparagus soup so that too will need freezer space. i may not be making chili for a month at this pace... :)

Mom made asparagus, onion, mushroom and tomato soup yesterday and also made some macaroni and tomatoes too so there is plenty of those in the fridge and freezer is now restocked.

i was up late doing dishes and then up early for the trash this morning so i may be napping a bit today even if it happens by mistake or by chance. i won't be doing any driving or work with power tools...

Tonight will be enchiladas. Beef and cheese and also a few plain cheese and onion (special request from DH). A big ol' pot of charro beans to go with and a Mexican themed chopped salad. There will be queso and chips for those so inclined. Debating on mexican/spanish rice...
