What's for dinner?

I made sheet pan chicken. Three large breasts chunked up, marinating in teriyaki all day, with four huge yellow potatoes and a bunch of veggies on top. YUMMY!
I made a sheet pan dinner last night too! Ours was seasoned broccoli on one side and a flat meatloaf on the other side. It was pretty good and I learned that flat meatloaf cooks much faster than bread-shaped meatloaf. I might start making all my meatloaves flat. It also called for putting a layer of breadcrumbs under the meat, and those soaked up the grease very well. Hardly any grease at all made it over to the broccoli side.
 
I have a pot roast in the future this weekend. We got some beef shanks at Costco.

I wasn't thinking when I cut up the onion last time and had fine strips like before I cut into dices. Just tossed it in with the meat and said oh well. Hubby really liked it that way. Usually have some cabbage when I do roasts. It's quite flavorful with the roasting and the juices.

Ok - now I have a hankering for pot roast. Need to go dig in the freezer.
 
I use the eggplant rounds as the "crust." Top it with sauce, cheese and pepperoni or sausage or anything else I can find. It's not pizza - but it's edible. You could almost call it a cousin to eggplant parm...but not exactly, lol.
I forget, have you done the fathead crusts? There are new recipes that are still low carb and not as "eggy" tasting. I have yet to try the minced chicken based crusts, but supposedly they are really good
