What's for dinner?

Beautiful roast going on.
I'm jealous! I went to the freezer but didn't dig very deep. First thing I came to was pulled pork from a couple weeks ago. I froze several bags in small serving size - just enough for DH and me to enjoy. His blood sugar was kinda low so got to indulge in a small potato. He stuffed that potato with the pulled pork, cheese, and sour cream. The other potato (I only had 2) was big so I cut it in half for me. That was lunch. I've got eggplant sliced up and soaking in salt water for a casserole this evening. The recipe is for eggplant aubergine. It was served at Wyatt's cafeteria back in the day and it's yummy! I got it every time we went.

so it is kinda like stuffing with eggplant and peppers in it. :) i've not had a stuffing or pudding i didn't like...

Kinda sorta. I've never made it with stuffing mix - mostly because I never have that stuff around. It sounds like it would be great though. However, I have used ritz cracker crumbs in place of bread crumbs. That's pretty tasty too.

My roast was very tasty & tender. I'll slice some for hot roast beef sandwiches tonight and rest will be cut for a big pot of beef stew. That'll make several meals, frozen into serving sizes. Home a lot next week so I'll pull out some poultry and make pot pies & stew with dumplings. Winter oven meals preparations 😋
