Got a free turkey the other day so it's about to go in the oven. After dinner tonight, I'll most likely debone and freeze it as I don't have room in my freezer for a whole turkey. Wouldn't ya know it - that freebie deal is still going on this week so I guess I'll buy another ham and get another free turkey. Thinking I'll can a bunch of beans with ham and likely part out the turkey. While I can't get a whole turkey in the freezer - I definitely can get some flat pkgs of turkey parts in there. If not - I might can the turkey too. Need to check my available jars.

I'm already planning soup with some of the nummy turkey! How about this one:


Turkey, Sweet Potato, and Black Bean Soup​


Ingredients​

  • 1 cup diced onion
  • 1 cup diced celery
  • 1 T olive oil
  • 2 cups diced sweet potato, cut in pieces about 1/2 inch (see notes)
  • 2 tsp. dried oregano (see notes)
  • 2 tsp. ground cumin
  • 1 tsp. ground chile powder
  • 1/2 tsp. dried sage
  • 6 cups turkey stock (see notes)
  • one 15 oz. can black beans
  • 4 cups diced leftover turkey (see notes)
  • 4 oz. can diced green chiles
  • 1/4 cup fresh squeezed lime juice (I used my fresh-frozen lime juice)
  • salt, fresh ground black pepper to taste

Instructions​

  • Heat olive oil in heavy soup pot, add onions and celery and saute about 5 minutes.
  • Add sweet potatoes, oregano, cumin, chile powder, sage, and turkey stock, lower heat to a simmer, and cook about 40 minutes, stirring a few times.
  • Add black beans, rinsing out the can with a small amount of water and adding all bean liquid. Simmer soup 15 minutes more.
  • Add diced turkey and green chiles and simmer about 15 minutes more.
  • Stir in fresh lime juice, season with salt and pepper as desired, and cook 5 minutes more.
  • Serve Turkey Sweet Potato Soup hot, with additional fresh lime to squeeze into soup if desired.

I'm thinking that'll be tomorrow's dinner.

I'm actually considering buying a 29 cent a lb turkey just to can. Already 2 in freezer, plus a breast -- will cook those in next 6 months. I did can just a large breast this summer. Pints for me as I'm cooking for one...but, I've made sure some proteins (beyond beans) is in the pantry. Cheap meat with holiday sales....heck, cheaper for cats than buying them cat food! Yes, all scraps are processed/fed to them. You have dogs. Treats! 😁

Ground beef on sale this week at one store. Need to make up some burger patties and some meatballs, those are used up it appears. And I'll can a pot of veg soup. Then I'm done with intentional winter preps. I'll just stew over spring garden. :lol:

Ham. Pulled a 7# butt portion out of freezer. It'll give me sandwiches all week, too. I'll slice & share with DD -- she's sub teaching thru end of yr, takes lunch. I'm looking at sweet potatoes & collards to go with tonight (home canned). And about weekend, it'll be in a pot of beans. 😁Use it up. Bought on sale $.89 a lb back this spring. Smells devine

Mom keeps saying she's not cooking and so far she's stuck to that pretty well. for which i am quite ok as we have a lot of things from the freezer to eat up.

today it is sloppy joes and a piece of bread. i just asked Mom if there was any ice-cream and she laughed. so i guess no ice-cream... :)
