Yum - hot turkey sandwiches sound good to me!

We had 15 bean soup cooked with the ham bone last night. It'll be a repeat performance tonight. Still holding out against the cornbread. Low carb tortillas w/cheese last night. Might try almond flour keto mug bread tonight. It has a cornbread like texture and it's pretty darn tasty.

I think I actually might have some cornbread "extract" for flavoring somewhere. Alternatively, I've used garlic powder and sliced scallions to give it a little different flavor. For breakfast, it's great just toasted with butter and sf jam.

Today I'll put a Boston butt in the oven. Takes a few hrs to cook and heats house. On sale ($.99#) & getting low on pulled pork BBQ, which is what it'll become after dinner for tonight. Such industrious plans. :lol: Thought I had plenty but shared with DD & DS. So just make another batch or two.

Yesterday I baked a small roaster hen -- will slice off meats and put carcass in pan for stock. Thinking a couple small pot pies will happen for the freezer....which is where hen had been. 🫤

We're tired of turkey fixin's. So I simmered the carcass and picked the meat and the softened bones for animal treats.

Last nite I fried some leftover rice, added onions and red bells, and then scrambled eggs into it. Served with sweet potatoes and salad.

We do love our butts around here, and I've got pulled pork in the freezer. I thought about having some last night but settled for a piece of toast. I need to do some "big" cooking and make up some ready to heat and eat freezer meals.
