Oh...you mean professionally, USDA approved method canned corn can develop botulism? Go figure. :rolleyes:

It's all the home canned stuff that's the REAL risk, isn't it? :rolleyes:

I got two cases of home canned garden sweet corn put up, it's delicious too. How does botulism happen? I mean I don't know how anything could survive the processing of canned corn. It's sterile jars, boiling water, salt and then a go in the pressure canner. Seems to me that would kill most any kind of bateria, don't you think?

You'd think....unless one part of their process isn't working properly. Not clean or not hot enough or a combination of both, at the cannery.

I dont can my corn. I blanch it then put it in vacuum sealed bags and freeze it. I hardly buy any veggies in the store.

We both can and freeze raw (not blanched) on the husk in vacuum sealed bags also. I like it best frozen on the husk myself. It's so easy to put up and then easy to shuck and de-silk after it's been frozen. But this year we canned because we still have some frozen.

I heard it was hard to can corn because of the high acid? Am I wrong? I have a Ball canning guide but never tried to can it. We always did the blanching and freezer bags.
