What's for dinner?

I Alfredo'd the eggplant. I had an open jar so needed to use it up. Put a think layer of alfredo sauce on the bottom of a baking dish, put the (pre-salted and rinsed) eggplant slices on top, spread more alfredo sauce on top and baked. Topped with lots of grated parm at the end. It was good! Next eggplant will definitely be Parm'd.
 
From pantry 😁

Chicken, broth, rice & broccoli fm freezer. Thickened for a sauce. Opened a qt of chicken & used half, so I'll have chicken salad for lunch tmrw.

Boston Butt from frzer to thaw for baking tmrw. It'll be dinner with sweet potatoes & greens. Most going into pulled pork BBQ ... 10#er to work up 👍. Thinking an apple pie might happen.

Ours was just cheddar on the low salt butterbread, but still good. Hubby prefers american singles but can't eat those anymore because of the salt. I don't like them, but then I didn't grow up eating them. That was rich person cheese.

Mom could get 2 pound blocks of Tillimook cheddar for cheaper than a small pack of american at the store. Or the government cheddar that came in the assistance boxes.

Even the school didn't use the expensive american cheese back when they actually cooked. Grilled cheese and tomato soup was on the menu a couple times a month. This confuses my husband because he always saw american cheese as cheap

well it was cheaper than swiss or parmesan or the block cheddars around here, but that was a long time ago. i don't really know what the cheese prices have been like recently here because i've been lucky enough to not do too much shopping. we've not been eating many singles this past year.

grilled cheese or grilled ham and cheese used to be at least twice a month meals.
