Don't forget to eat the greens on those root crops too; even radish greens- which no one thinks about- make a tasty soup very similar to watercress soup.
we are hopeful. I have already realized we don't have enough space for all the things I want to grow. I see another expansion in the future. But for now we will do with what we have and hope it's enough to make a difference. I think it would take a whole acre to keep us fed.
Garden space is like closet, table, and shelf space inside the home; plants (or clutter) expand to fill all available space no matter how much you expand.
How large is your garden now? Mine is 1/5th acre for 4 people and we can put up a lot of food. we don't grow corn because we can get it local so cheaply and we don't preserve it.
We're still eating on pumpkins, squash, onion. canned carrots, green beans, tomatoes, applesauce, berries, condiments. and frozen zucchini, zucchini bread. I'm going to run out of green beans because ours didn't produce in 2917. We're still eating 2016 jars, just a handful left
