Arugula? Need ideas!

My friend gave me a big bag of arugula that she got from her CSA but didn't want. I have no idea what to do with it, aside from adding to salads.

Any ideas? I probably have 16 cups worth!

It's delicious in a quiche! Steam it like you would with spinach first.
 
I'm only growing it for my SIL, so I'm giving mine all to her! :lol:

The goats would probably like it... :)

I can't stand the stuff.

For people who like it though, it is a winter-hardy crop that can be grown most places in the US right through the worst winter months.

I am not sure that I like arugula either. I guess I can hide it in a quiche.

I will do some searching and post anything promising!
 
Well that was quick....this one looks yummy

Goat Cheese and Arugula over Penne

5 1/2 ounces goat cheese
2 cups coarsely chopped arugula, stems included
1 cup quartered cherry tomatoes
1/4 cup olive oil
2 teaspoons minced garlic
1/2 teaspoon ground black pepper
1/2 teaspoon salt
8 ounces penne pasta

Cook pasta in a large pot of boiling salted water until al dente. Crumble goat cheese into a large serving bowl. Add arugula, cherry tomatoes, olive oil, garlic and salt and pepper. Drain pasta and toss with goat cheese mixture. Serve.
 
Why you all hatin' on the arugula? It's so much like spinach with a little bitterness added. I hate swiss chard. :plbb
