Cream Cheese/Butter Cream Frosting

2 (8 ounce) packages cream cheese, softened
1/2 cup butter, softened
2 cups sifted confectioners sugar
1 teaspoon vanilla extract

In a medium bowl, cream together the cream cheese and butter until creamy. Mix in the vanilla, then gradually stir in the confectioners' sugar. Store in the refrigerator after use.

NOTE: I made a sheet cake so I knew this recipe would be too much, so I did this:

1 (8 ounce) package of cream cheese
1/4 cup butter, softened
2 cups confectioners sugar (I didn't sift... too much trouble :P )
1 1/2 teaspoons vanilla (I does like my vanilla!)

This was the perfect amount for a sheet cake without being too sweet. When I make a regular round stacked cake, I'll use the top recipe, which should taste even more like cheesecake.

You know, at my physical on Monday, my doctor told me that I lost 15 lbs. since last year. But if you all keep posting these good recipes, I don't know... :gig
 
Is there any low carb way to get the fluff that confectioners sugar gives???

I can beat sour cream and cream cheese together and butter and add stevia... but it's heavy.
 
Well, you might if you could get powdered erythritol. It used to be available, but I guess the extra processing was expensive so a lot of places stopped carrying it. Rumor has it you can get close by putting the crystals in a blender and blending the bajezzis out of them.
