Mom is a firm believer you shouldn't season until use. It's fairly versatile in most recipes that use sauces or in soups. She uses pork the same as beef or deer much of the time.

getting it done! thats alot of work. still have to finish rendering the lard and cure the bellies for bacon but we are there!
