Henrietta23, yup, those substances in soy, phytates, inhibit digestion as well, and are very irritating to the digestive tract.
BBH, whoa, there, girl, slow down! Corn is still very high on the glycemic scale, so will pack the pounds on you, organic or not, baked or fried. So go easy. I just eat a few, a bag can last me for a couple of weeks even if I am on one of my rolls where I eat the same thing every day. So baked or fried, I still read the label. Know that the oils they fry them in are baaaad for you, and many baked chips have lots of crap in them to make them not taste like they came from a pile of leaves you just raked up.
Oh, that reminds me of a funny story.....years ago, when baked chips first came out, dh bought some and I thought they tasted like the leaf pile. Later, he bought some more, and I didn't bother with them, and the bag was on top of the fridge for a while.
My friend came over and spotted them, and asked if she could try them, she'd been wanting to. Sure, go ahead, they are disgusting! She opened the bag, and her eyes flew open with delight, she said they were wonderful, just like regular chips....of course I had to try them, figuring they company must've improved the formula.....we were both munching and exclaiming when we heard dh snickering in the other room.......BUSTED!!!!! He'd been buying regular chips and refilling the baked bag so I wouldn't mess with his chips!!!! Or give him "the look" when he ate them!
The tortilla chips I choose are simply corn, salt, veg oil in the ingredient list. One day, when I have more lard to play with, I will be making my own. Maybe. Meanwhile, it is a concession I make because I enjoy them so much. I eat them in extreme moderation.
