One of my favorite snacks as a kid was graham crackers and marshmallow cream.
I used to eat that. And sometimes I added peanutbutter.

These are what I make when we go camping:

Camp Grahms

Smear grahm crackers with peanut butter (smooth, chunky (your choice)). Pour melted white chocolate over and put in fridge until chocolate sets.

Dried apples and other fruit, especially if made at home! Applesauce with frozen berries (picked in the wild in summer) mixed in.

I made fruit leather Monday and my son loved it. It was very easy to make. I cut up apples and a banana. I put them in a blender. Once they were puree. I put some cinnamon into it. Then, I put it into a cooksheet that I lightly sprayed with Pam. I put it in the oven on the lowest temp. and waited until it turned into leather. It took several hours. I know that I will be canning more applesause next year so I can make this throughout the year.
