A pig pickin' (also known as rolling a pig, pig pull, hog roast, pig roast or, among the Cajun, "cochon de lait") is a type of party or gathering held primarily in the American South which involves the barbecuing of a whole hog (the castrated male pig or barrow, bred for consumption at about 12 weeks old).

Who knew?

I've never even heard of one - much less have attended one, lol.

But, eat the ear? Isn't it nothing but cartilage?

HUH? :idunno Pig Pickin? I'm so confused! LoL

A pig pickin is a type of party or gathering held primarily in the Southern US which involves the barbecuing of a whole hog. Females, or gilts, are used as well. Boars and sows generally are too large.

Ear is like my favorite part of the hog. Weird I know but BBQ'ed right its awesome. You gotta be quick when the cook hollers "come and get it" because I am far from alone. Not all pig pickin cooks include the head but the good ones do.
