Day 0 - my son in law and I brewed up another 5 gallon batch of american wheat, since the first is so delicious :)

Original Gravity 1.068ish will put this batch around 7.5%ish alcohol content. Of course Baby Bear Cow Wolf had to make sure it passed the sniff test. I better not catch him drinking water out of the blow off bucket again... He's such a lush!

Day 12 - bottling day. Daughter ran the vinator (bottle sanitizer), son in law ran the bottling wand and I capped. We put up 52 bottles in less than 25 minutes, including priming sugar and racking into the bottling bucket.

A family that makes beer together, stays together :)

Bottles are put up to carbonate - see you in about 2 weeks.

Day 19 / bottle day 7 - I had try try one. Much to my surprise its carbonated and really delicious. This batch has more yeast bed sediment in the bottom of the bottle but still not a failure by any means. Smooth and sweet very little hop bitterness - I like it. Although at 7.5% ABV it does have a little kick. After drinking the glass, I'm feeling slightly buzzed, as I type this... So, I'm now 2 for 2 with this Golden American Wheat beer and my confidence is growing that I can successful replicate the recipe :)

Yep I'm buzzed alight... No driving until the buzz is gone for me. I should not have drank this on a empty stomach for sure.

Day 1 - Huston we have ignition :)

This is kind of a cool picture, about 4 hours after pitching the yeast. You can see the ale yeast rising up off the bottom as it eats the simple (brown colored) sugars and reproduces.

Day 2 - head is starting to fall and got a bubble out of the air lock about once every 5 seconds. Interesting photo you can see the beer color lightening top down as the yeast works on more complex sugars.

Day 3 - got a air bubble about once every 10 seconds now. You can really see the head falling now to reveal its golden deliciousness. I believe the right term is suspension. Yeast is falling out of suspension, working on complex sugars and cleaning up as it does. Its amazing how ale yeast works... The american wheat wort started out quite dark (see post #1) but will finish out golden. This is why I call this beer Golden American Wheat. Not to be confused with a German Hefeweizen ("yeast wheat"). All ingredients are grown in the USA, including the yeast. I have so much to learn about brewing beer... Its like a vast dense forest to try and navigate through.

I'll most likely rack this batch into a secondary, to clear out carboy Saturday or Sunday. This will free up my primary for my next hand crafted brew, a Irish Red Ale, I just hope I don't mess it up.
