Breakfast:
fluffy coconut flour and pecan pancakes
raw local honey
water

Lunch: (a bit of a cheat)
Moroccan lentil soup (carrots, kale, lentils and spices)
water

Dinner plans:
Mexican style slow roasted grass fed roast
served in romaine boats with cilantro, red onions, tomatoes, kefir cream and salsa
water

Sam had an apple for a snack.

I am down 3 sizes in my jeans!!! Sam has been playing outside all afternoon!

The mexi boats were fantastic, I just wanted to add that I squirted lime on them. I'm changing the name to "Fajita lettuce wraps", it is exactly what they tasted like. YUM!

Here is that shortcake recipe...
Strawberry Shortcake

These delicious little shortcakes are made in muffin cups.

Ingredients

cup sifted TIANA coconut flour
3 tablespoons butter, melted
3 eggs
3 tablespoons honey
teaspoon salt
teaspoon vanilla
teaspoon baking powder

Method

Blend together butter, eggs, honey, salt and vanilla. Combine coconut flour with baking powder and whisk into batter until there are no lumps. Pour batter into greased muffin cups. Bake at 205 Degree C (400F) for 15 minutes. Serve topped with fresh strawberries and whipped cream. Makes 6 cakes.

To make them lower carb, I replace the honey with more oil and then added some Truvia. I also use duck eggs instead of chicken eggs, so it contains a lot more egg than the recipe calls for. They taste great.

I just made these today: http://networkedblogs.com/gTUNb They are in the oven, I'll post the results in a bit. (I used blueberries and honey instead of strawberries and mango.)

Breakfast:
fresh fried eggs, salsa, cilantro and avocado slices
water

Lunch:
(I skipped b/c I wasn't hungry)
Sam had left over cold fajita lettuce wraps
water

Dinner plans:
crock pot (primal) meatloaf
green beans in butter
water

dessert:
primal blueberry muffins

eta: they turned out great! They don't rise much though.
