Thanks for the tips. So I'm guessing that part of my problem is that I'm leaving the shell on and peeling them as I'm eating them. Do they stay good for a decent amount of time if you peel them right away? I will boil 12-18 at a time and we take a good week to 2 weeks to eat them.

I also use eggs that have aged a little, and I steam them in my veggie steamer for about 15-20 minutes.

Well that explains why it's so much easier to peel eggs from the store! I was wondering why I had so much trouble when i made deviled eggs. All this talk of deviled eggs is making me :drool

I finally had my first decent batch of hard-bolied fresh eggs. I boiled them, cooled them in cold water, and then but them back in the hot water and boiled them again for 5 more minutes, and then back in the cold water.

I always try to use the oldest eggs I have and even leave them out for a day or so before I need them..

I can't get the fresh ones to peel. :barnie
