Thin mints, mmmm haven't had those in years.
There are several clone recipes for tagalongs online I'll post one but search and you will have several to choose from.


Homemade Tagalongs (a.k.a. Peanut Butter Patties)
Cookies
1 cup butter, soft
1/2 cup sugar
2 cups all purpose flour
1/4 tsp baking powder
1/2 tsp salt
1/2 tsp vanilla extract
2 tbsp milk

Preheat oven to 350F.
In a large mixing bowl, cream together butter and sugar. Mix in flour, baking powder and salt at a low speed, followed by the vanilla and milk. The dough should come together into a soft ball.
Take a tablespoon full of dough and flatten it into a disc about 1/4-inch thick. Place on a parchment-lined baking sheet and repeat with remaining dough. Cookies will not spread too much, so you can squeeze them in more than you would for chocolate chip cookies. (Alternatively, you can use a cookie cutter, as described in the post above).
Bake cookies for 11-13 minutes, until bottoms and the edges are lightly browned and cookies are set.
Immediately after removing cookies from the oven, use your thumb or a small spoon to make a depression in the center of each cookie
Cool for a few minutes on the baking sheet then transfer to a wire rack to cool completely.

Filling
1 1/2 cups creamy peanut butter (natural or regular)
3/4 cup confectioners sugar*
generous pinch salt
1/2 tsp vanilla extract
about 8-oz semisweet chocolate

In a small bowl, whisk together peanut butter, confectioners sugar, salt and vanilla. When the mixture has come together, heat it in the microwave (again in short intervals, stirring frequently), until it is very, very soft. Working carefully with the hot filling, transfer it to a pastry bag (or plastic bag with the tip cut off) and pipe a generous dome of the filling into each cookies thumbprint.
Chill cookies with filling for 20-30 minutes, or until the peanut butter is firm.
Melt the chocolate in a small, heat-resistant bowl. This can be done in a microwave (with frequent stirring) or on a double boiler, but the bowl of melted chocolate should ultimately be placed above a pan of hot, but not boiling, water to keep it fluid while you work.
Dip chilled cookies into chocolate, let excess drip off, and place on a sheet of parchment paper to let the cookies set up. The setting process can be accelerated by putting the cookies into the refrigerator once they have been coated.

Makes about 3-dozen

*You might need slightly less sugar if youre using the conventional peanut butter, as it tends to be a bit sweeter. Taste the filling before using to make sure you like the sweet/savory balance.

Oh my gosh! I remember Eagen's Big Tom's. They did have 4 or 5 shop's around Oly area. I know they closed the Tumwater-they put in a bank, gas station, BurgerKing, mexican restaurant & hotel in that area. And if I remember right (been 12 years since living there), they closed all but the one on the Oly/Lacey border-and by now that one may be closed too :hu

Sorry, I don't have a clue about their sauce recipe-it just brought back memories!
There are two still open Eagan's on the westside and Big Tom's in Tumwater, my family still goes often to taunt me...I went to that hamburger joint from the time I can remember, it is my parent's favorite hamburger place.

That's right, they just moved I think farther south on Capital. I just remembered the small drive up hut they did have.....They had good food too & the best fries ;)

Peppermint Patties that are good for you.

Peppermint Patties
I got the idea for these from Elana's Pantry and then I got some coconut spread for the first time. I decided the coconut spread would make a great center to peppermint patties. I wanted to make the chocolate coating without using hard chocolate so I used the chocolate fudge recipe from above but with mint extract. I quickly realized I'm not very good at forming patties, but I don't think that affects the taste ;) Note these are dense chewy peppermint patties, just the way I like them. If you like the center soft, I think coconut oil would work better as in Elana's recipe.

Filling:
1/2 cup coconut spread/butter (not the same as coconut oil)
5 tbsp honey
1/2 tsp peppermint extract
sprinkle sea salt

Coating:
Use the Coconut Chocolate Fudge recipe above with mint.

Method:
Mix filling ingredients by hand. If you want it completely smooth you can process it in a food processor. Place in the fridge for 30 minutes or until it's hard enough to form into balls. Get a plate out and put parchment paper over it. Take about a spoonful of filling, roll it into a ball, and press it down to form a patty on the parchment paper. Do this will all the filling, it should make about 12 patties. Return it to the fridge.

Make the coating recipe and keep it at room temperature. Take the filling patties out of the fridge. Quickly dip each patty into the chocolate until covered. Place patties back on parchment paper. Return to the fridge. Leave for a few minutes for the chocolate to harden. Repeat process again. Instead of dipping the patties in chocolate, you can try pouring the chocolate over them with a spoon.

Keep patties in the fridge until ready to eat. Enjoy!

The Tumwater address is 6400 Capitol Boulevard Southeast.
the other is 1420 Harrison Ave NW in Olympia. I will have to ask my Dad if they are both still open I guess. All I can say is I crave them, just one of those comfort foods growing up.

I picked up Nilla wafers when I was out today after reading this thread! I am pretty sure I have mint chocolate melts!
