the key to making great creamy homemade fudge is not to stir it.

.... now back to our programing.....
 
not to stir it, I thought you had to stir like crazy til it was done????

no, you add your ingredients and let it melt on med, and cook until it reaches 230 degrees. you can stir a little, but don't scrape the sides of the pot, but when it gets to a soft ball stage, you take it off the heat and let cool to luke warm. This is where you don't stir at all. the sugar crystals form on the sides and if you stir you'll end up with grainy fudge. after it cools to luke warm, add your butter and vanilla and stir the devil out of it until it isn't shiny any more. takes about 5 - 10 minutes and a very sore arm.

works like a charm, very creamy, no grainys! :)

that is exactly what I get, tons of grainy in the fudge and I hate that texture actually...nasty

very interesting and I wrote all that done and will try some again! :)
 
I made so much fudge over the holidays, I don't want to think about it. :P It was delicious though.

Now, how did this have anything to do with living on $6,500? :lol:
