So... quick question for all the experienced liverwurst makers. Can I make liverwurst out of sheep, deer, moose etc? Or is it exclusive to pigs. If you look at Bourbon Red's ingredient list, can i just substitute sheep liver and fatty sheep meat, and then put sheep tallow on top. that should work, right?

Gaah! Time got away from me again and we are leaving for a party soon. No 'wurst yet. But the first half of the lard is done and the second half of the bones are in the oven roasting. I had pork soup for breakfast! It was so much better today!

Off to salt the fat for salt pork!
