We got 2 deer last Nov. Then I scored on some fatty pork shoulders. My son (Married with 3 kids) and I agreed that we would turn the trim into brat patties. Last year we turned the trim into breakfast sausage.

Ive been butchering and grinding meat since I was a kid on the farm back in the 70's (We did custom butchering)

That's awesome and it looks delicious! I know that's a lot of work. I've made pan sausage with my home processed pork. It was really good.
