Making Bratwurst

We got 2 deer last Nov. Then I scored on some fatty pork shoulders. My son (Married with 3 kids) and I agreed that we would turn the trim into brat patties. Last year we turned the trim into breakfast sausage.

Ive been butchering and grinding meat since I was a kid on the farm back in the 70's (We did custom butchering)

The brats were made by my wife and me but last year when we made breakfast sausage, My son and grandson helped.

That's awesome and it looks delicious! I know that's a lot of work. I've made pan sausage with my home processed pork. It was really good.

I do miss venison. No deer where we are. Moose are super regulated, so we only very rarely get moose.
