I got some pork steaks back from the butcher. (And by the way, my pig weighed 417 lbs!!! So tons of bacon! I think I see OFG out in my bushes!)

I just want to know if it is cut from the pork but b/c I see some recipes on line for that. And do you have any recipes to share?

Holy Hog, Batgirl! 417! :ep My two, together, hung at about half that! Shoot! What kind of pig was that again? How old was he? I need to get me one of them pigs next year!

No idea about the steaks, though.

lol free! He was a durok-hampshire mix er, I mean cross, I think. He was just under a year old.

I have probably, um, 20 packages of bacon! Tons of sausage, roasts, steaks, chops--enough to choke a frog, hams, steaks, shoulders etc. Plus a whole head for my friend. Just his head can fill an ice chest!

Congrats on all that meat from your pig! Now for the pork steaks,
You could fry them:
Sprinkle with salt, pepper and garlic powder
dredge in flour, dip in cold water then dredge in flour again
fry in hot fat until brown and no pink in the middle

When it's smoking, it's cooking
When it's black, it's done!

Stir fry:
Cut meat into bite size peices
Peel a sweet potato, slice thin
Cut an onion into chunks
Cut a bell pepper into chunks
Handful of pecans, walnuts or peanuts

saute meat until done, put in a bowl
put veggies and nuts in skillet, saute over medium heat
season with McCormick Carribean Jerk Seasoning
stir veggies until softened, not soggy
add pork back in and stir together
serve over rice or noodles

I use olive oil to saute, but I bet you have some nice yummy lard

Enjoy!

I cook them same as chops. They are just an odd cut. We grill them a lot too. They tend to be juicier than regular chops and DH actually prefers them because of that.

I love 'em with sauerkraut.

You brown them in a pan. Grease a baking dish with whatever you like, put sauerkraut in it, add your pork steaks(chops or whatever) cover and bake for about 1 hour. You can add bacon to the sauerkraut and sprinkle paprika on top. Serve with mashed potatoes and applesauce.
If your sauerkraut is too dry, you can add a bit of white wine. It enhances the flavor of sauerkraut anyway.
