Quick salsa

My salsa recipe:


1 can diced tomatoes
several cloves of garlic
1small to med. sized onion
half a bunch of cilantro
jalapenos in escabeche (to your own heat taste)
juice of half a lemon
salt to taste

chop all ingredients finely, or throw in a blender.

You can also can the above using cold water bath.

THat sounds like another good recipe. I might run out of tomatos though.

I buy petite diced tomatoes like I buy bread! I always buy a bunch of cans each week. :lol:
Ticks, you can add a can of corn to your salsa, too. Now that you have an idea of the basic recipe, you can try anything you like!!
In reading chcknrs's great recipe ..it reminded me that I forgot to tell you to add lime juice, just a squeeze to salsa. Any citric acid will just add to the flavor. If you are using a fruit mixture then try adding some orange juice, etc. Play with it. yum

There was another salsa recipe I remembered:

Finely chop cabbage, onion and cucumber.
Add chopped jalapeno, cilantro, lemon juice and salt. Mix well. Makes a crunchy salsa that is yummy and a different taste.

You can add ketchup and avocado and it makes a great spanish style cocktail sauce for your shrimp or crab!

I have never canned salsa (yet), but in my fresh stuff I make-- I add a bit of cucumber. It gives it a real fresh taste.

interesting additions to the salsa recipes, can't wait to try them, especially the cucumbers, yum.

All of these look good....I noticed in the Ball canning book that there is a lot more that goes into salsa.....question is, do you make it how ever you want and then can it? And....is cilantro a 'staple' ingredient when making it? Thanx... :)

My DH makes the best fresh salsa. It includes..
diced tomatoes - usually fresh not canned - onions, green peppers, cilantro, cucumbers, and a dash of lemon juice. It is soo good!!

I was wondering. Does anyone can their fresh salsa. I have always wanted to try canning some of his salsa and have been afraid to because I have never seen a recipe quite like this. Do you think it would work??
