Yeah I seen her with the ingredients for this pecan pie baked oats. From memory, she had oats, water, brown sugar, a few eggs, vanilla, pecans and a few other ingredients. She just mixes it all up in the glass pan and bakes it.

I've been meaning to ask her why she refuses to buy ceral from the store. I'll try and remember to ask her.

Its true!

I'll have fresh milk in another month and job work cranking back up. I need to eat breakfast and it's the meal I most dislike to make because I'm always rushing. So leftovers from supper are often the thing. Which is good. But these and scrambled egg muffin casserole are easy and filling. Plus a switch. The oatmeal things can be muffin shapes too. 😁

Just a forwarding going from sugar bomb to "lite" is a gradual process. But now I can taste sugar where I didn't used to before. Mother in law made chilli, I tasted sugar. I asked her if it had sugar. She said just a little to cut counter balance the acidity in the tomatoes. I said oh, but thought to myself that her balancing thingy might be broken.

Sugar does not balance acid in tomatoes. Only time I've ever seen it do any good was when just a little extra was used on bbq sauce to make it caramelize better. But that is supposed to be sweet. Add a bit of shredded cheese into your chili or spaghetti sauce to cut the acid. Mom uses cream cheese sometimes and people rave. Heartburn issue from spaghetti sauce? Add ground fennel seed. It's often missing from the spices used anyway and ups the flavor of the sauce.

I cannot stand sweetened tomato based things that shouldn't be. So most commercial spaghetti sauce and pizza sauce. Ravioli is inedible to me now because of how much sugar they add to it. I won't eat Pizza Hut either. We went once years back right after they said they "Improved" their pizza. I couldn't eat it. Lots of sugar in the sauce and dough. Cotton candy has less sugar.

i'm glad i don't have reactions to tomatoes because i'd hate to add anything to the spaghetti sauce that Mom makes (i know the recipe so it won't be lost). she does add just a bit of sugar to an entire pot. like a tablespoon or less. i can't taste it even when i can taste everything else.

I can't tolerate sugar added to tomatoes! (Or the baking soda trick)

My solution is to get canned tomatoes that dont have acid added. (Cento or Pomi brands, but read the labels to double check). Then I make the sauce 50% other veggies - onions, celery, garlic, spinach, bell peppers, mushrooms.

No acidity problems then! 😅
