Pumpkin cookies? Tell me more....
The recipe is from the Libby's pumpkin website. Hubby gave the seal of approval. He barely left me any. :tongue They were called "Old Fashioned Soft Pumpkin Cookies" . Here's the link: http://www.verybestbaking.com/recipes/32364/Old-Fashioned-Soft-Pumpkin-Cookies/detail.aspx

I was just there getting so tempted while I was looking for it. Also found some bars and some Chai cookies that look really good. I have to get away from that site before it blows all my good intentions out the window! . For those that want to see the troublemakers :

Last year we took my horsie to the beach and then stopped at Jack in the Box with him and got him fries!! We ate some too. We lived in a nasty place last year, so after beach time we came home and stressed out :(

This year probably taking pony to beach again, I really dont want to cook because I have to work 8 day in a row before them, and the night before I start working I have a huge party...ugh. My old coworker will probably be heading by after she gets off work though, so I might make some chicken type thing.

(I hate thanksgiving lol, can you tell?)

I am making our own dinner for when we go to my In-loves. I will help my M-I-L make their meal, but I will probably make lasagna, since both the boys love it (and so do I), but I will make it at my house and heat it up there, probably on the grill, since the oven will be used!

Oh dear. I just remembered. We are having 2 dinners this year at the in-loves. one next weekend, one on T-day...DOH.

Ummm...well, one of those times will be lasagna!

I just tested this recipe for brussel sprout salad. This would be a great T-day side dish!

1lb brussel sprouts
3 tartish apples
1/2C fresh lemon juice
2 T olive oil
8 slices crispy bacon chopped
1 large clove garlic minced
4 tsp dijon mustard
3T red wine vinegar
s & P
3/4 C toasted pecan pieces
3 oz manchego cheese (I subbed smoked gouda)

1. slice brussels sprouts in food processor
2. coarsely chop the apples and toss in bowl with lemon juice
3. in large skillet heat bacon until crispy, take out and pat out grease. Then saute garlic in the hot grease, add mustard, remaining juice from the apples and vinegar, season to taste with s&P.
4. In large bowl combine everything.
5. Eat!
