Thinking about processing a few old chickens

I understand doing that, if you don't have time to play with the rest, but I'm too frugal. I can't see it happening for me. I'm going to want all the meat from the boney pieces and to make rice dressing mix with the organ meats. I make my chickens pay for themselves, even if it takes me a bit of trouble.
My neighbor did that with some prairie hens he had killed and I got the rest and believe me, I had lots of meat, just with what he didn't want. But he was happy and I was happy.
