Thanks everyone! And great article BB! I always forget what a pain it is peeling and de-seeding tomatoes! But the results... yum!

I no longer can plain tomato sauce. I dehydrate the tomato slices and grind them up into powder. You can then mix with water to make exactly how much you need. If you need tomato paste instead of sauce, add less water. If you want tomato juice, add more. Easy Peasy!
I like to have dehydrated tomato powder on hand. It is so useful! I like to use it to thicken stews, add a punch of flavor to almost anything. It is really good in scrambled eggs, but makes them an unappetizing pinkish color :sick

If you add some powdered spinach to it, you'd probably get a kind of brownish color... not sure if that would be better though

That is a good idea about the powdered spinach, but I never thought about dehydrating spinach. Just wash it and put it on the dehydrator trays and use the "herbs" setting I suppose.
