I have no suggestions in regards to food.

I am curious why they wouldn't eat eggs. I wonder if you had a flock of hens and no rooster to fertilize the eggs, if it would still be off limits. I can see why they wouldn't eat a fertilized egg because of their beliefs, but I wonder how they view unfertilized eggs. Perhaps ask them for me, if it's not disrespectful. :)

I don't know the answer, but.....most people nowadays do not understand the egg/rooster/fertilized/not fertilized thing. Most people think the blood spot in the occasional egg is a fertilized egg.

I wouldn't know.
Didn't think of that one.

I just figured that if they would eat dairy, they would eat unfertilized eggs.

If this is clogging the thread just let me know and I'll stop, it's not that important, just a stray casual comment. :)

I plan to ask about the unfertilized egg thing if they seem receptive to questions. I'll let y'all know how it goes. I'm thinking a pot of Curry beans with some kind of Flat bread. have to work that day so something that I can do in the crock pot would be perfect. I plan to serve some king of salad also. Now I need a dessert.

Wifezilla-What about baked butternut squash for bean bowls? I could bake them the day before and warm them for dinner? What do you think?

When my vegetarian niece (+hubby and daughter) from England visited at Thanksgiving some years ago I made everything just as I usually do, but added in some acorn squash stuffed with wild rice (don't remember the recipe, but there was probably more to the stuffing than just wild rice) so they would have something substantial, but also very American.
In your case, I would hesitate making a curry, just because anything I would do would probably be vastly inferior to what they are used to. And there are plenty of things that would be "American", and still
be appropriate. Sylvie's roasted root vegetables sound quite delicious.
