Water Kefir?

On my local craigslist there was a posting selling water kefir grains. You need to use a bunch of stuff I had never heard of, as well as..I think it was either corn syrup or sugar. I suppose the milk kefir eats the sugar from the milk, so water kefir has to have som added sugars. But how is it possible to ferment water, and what would be the point? Has anyone ever heard of this?

You'd not be fermenting the water itself, you'd be fermenting the *sugars*, same as any other fermentation (e.g. the sugars in grape juice are fermented into alcohols to get wine, etc)

I have not tried it (or real kefir either) and have no idea what it would be like, presumably (?) less nutritious than kefir based on milk, but, dunno

Isn't it for making treats like soda, flavor the fermented stuff with juice and such? If so, sounds yummy that way. Grape, orange, lemon/lime, raspberry, elderberry, mixed berry.....the possibilities are endless!
