I can just use a spoon and eat this right out of a jar. My sushi-making buddy is concocting a roll using this relish.... :drool

From the Ball Blue Book 100th Anniversary Edition, pg 53

Beet Relish
1 quart chopped cooked beets
1 quart chopped cabbage
1 1/2 cups sugar
1 cup chopped onion
1 cup chopped sweet red peppers
1 tablespoon prepared horseradish
1 tablespoon salt
3 cups vinegar

Combine all ingredients in a large saucepot. Simmer 10 minutes. Bring to a boil. Pack into hot jars, leaving 1/4 inch headspace. Remove air bubbles. Adjust two piece caps.

Process 15 minutes in a boiling water canner.
Sounds wonderful, I think I can get enough beets together to do this in a few days :)
 
On the red beets-I wouldn't peel and boil them to cook them... Roast them!! I roast them like you would potatoes (but it might take about 10 to 15 minutes longer depending on size) and then cool slightly and then cut the stem end off and squeeze them out of the skins. then mash or slice or what have you for freezing...
My hubs wouldn't eat beets till I grew them and roasted them... I would squeeze out of their jackets and mash with a fork slightly and put butter and a bit of sea salt on them and sometimes a slight drizzle of maple syrup.. now he loves them.. but only baked.

That actually sounds really good. I'm also thinking I'll just puree them for soups and such :)
 
Roasting and pureeing them would be great!

I've been a cook for years and just now as I was slicing mushrooms on the mandoline I backed up a bit stepped on the cat who then screeched and my thumb slipped off the holder and I sliced a bit into my thumb! Wouldn't cha know it?!! :he and I just picked about 3/4th of a bushel of tomatoes to can tomorrow!! lol.. looks like I will be taping a rubber glove over that thumb.. At least it was the last big mushroom.. and they are all safe in the dehydrator with the potato slices. It is just gonna be one of "those" days!!:hide

well, by time everything is run through the dehydrator whatever is in your bloodstream will be dried out :D So, those veggies will be safe to eat and noone the wiser :D

I checked that last one and there was no blood anywhere.. lol just more protein for family!! lol

I hope he does. I have 30 pints or so of 5 or 6 different relishes on the canned food shelf. Went a little overboard. :hide

Did 8 half-pints of strawberry jam earlier today, and just pulled the last of 28 quarts/litres (I have both sizes) of pears out of the canner--last load included one of my glass-lidded Gem jars. We'll see in the morning how it sealed :)
 
Nothing now, but did 7 1/2 pints of muscadine jelly a couple weeks ago.
We thought it would never set, and started calling it muscadine syrup. It finally set.
That was all that we had left growing - one vine didn't produce and this was all off one. We got it in before the birds and such got it all.
