Also... does anyone think the 23 quart presto canner is a solid buy? I have the smaller one but cannot "safely" hot water bathe quart jars with it... and would SURELY like to do more than 9 pints at a time when I can stuff.

I love mine as well, I would say, if you are going to get one, go ahead and order a second rack with it so you can safely double stack your pints. I forgot to and had to improvise with the rack from my mom's pressure cooker.

NO! Using anything but a pressure canner and there is a difference between pressure canner and pressure cooker, would not be safe and the last thing you want to do is sicken someone who has eaten canned food that was not done properly. "More than 90 percent of the cases of food poisoning each year are caused by ... Undercooking or improper processing of home-canned foods can cause very serious food poisoning" according to aggie extension office literature.

This will answer a lot of you questions about safety and what can and cant be done.

If you are not sure about a pressure canner cost wise go with the presto, Amazon or Walmart sell for a great price and it can be used on a flat top stove. Once you become addicted (and you will ) Then buy the All American which is top of the line as far as canners go.

I am not sure what my problem is but I have canned nothing yet this year. Normally I have my garden producing by now and fruit from the orchard. Everything is late. I plan to supplement from the farmers market but prices still seem a bit high. I guess I should be careful I don't miss the fruits and veggies.

We are almost past berry stage here, you better keep your eyes out, LOL! I am waiting for the farmers market here to get the corn and more veggies in, I am wanting to put up corn salsa, corn cob jelly and more relishes. I am wanting to put up organic salsa and ketchup this year also since I pay a fortune for them at the store, just need to find the organic toms at a decent price.

Green Beans. Not near as much as I had hoped. I had hoped to be swamped with canning them for a solid two weeks. Sadly , it doesnt look like the garden is going to produce that much.

I am in the same boat. Everything is SO late I have canned nothing as of yet. Oh well at least I am not alone. :/

Ok so here is what I have found.

Peaches 49 cents per pound and apricots 99 cents. I am skipping on the apricots because I have a tree. It is looking like it should have a good crop this year. The cold weather is causing everything to lag. Usually by July 4th I have apricots and plums. Not yet still green.

Last year the cheapest I could get good peaches for canning was 3 lbs for a buck. But I think this year is going to be a bit more expensive.

So it's a gamble. I want to buy peaches but I am hoping the price will come down a bit more. I think maybe their trees are lagging just like mine. I could hedge my bet. Buy some now and more if they come down in cost. Then I will average out.

It's a gamble.

Green beans are still over a dollar. I found a local gal who sells on CL but it's a 30 min drive. I would go for a huge load but I don't think her garden is that big.

So it's a waiting game. I am going to assemble my jars and canner and be ready.

It's fully peach season here. Plum, too. I picked a tree full of plums on Monday and most of a tree full of peaches Tuesday. I made 30 pints of peach related jams yesterday.

I get to go back tomorrow and get the rest of the peaches.

I recently began making strawberry jams with all the berries I bought, washed, topped and froze during the season. I have 27 pints of that. Once the apples come in for Apple Marmalade, we'll be set!

I am still waiting for green beans to be in abundance at the farmer's market. Tomorrow I have a guest over, but hope to get a few quarts of Zucchini Salsa done in the afternoon. My zucchini plants are winding down and the tomatoes are just getting ripe, so it's a good time.

If you have extra, Frankie, I am desperately seeking peaches. FreeCycle has yielded nothing. I am down to two jars. I am good on pears and apples, but peaches aren't going to last but a couple more meals. I don't have much to trade but maybe ten yellow squash and a few pattypans. The cukes are going very slowly. Not even 3" long now.
