The wife walked in the back door with 1 1/2 bushels of white peaches about an hour ago - she's going to get more sugar and adult beverages..... :P

Count for the weekend was 61 pints of corn (updated from above) plus
7 pints corn relish
7 pints zucchini pickles

I usually put the tomatoes I collect in the freezer (the ones we don't eat right away) until I get a nice big batch for sauce or salsa. ;)
 
I did a bit of canning today ... tomatoes.

9 quarts plus 3 pints = whole tomatoes
3 quarts plus 1 pint = red Italian sauce
5 quarts = tomato juice

Garden Pixy, have you made the pectin before? And has it worked well? I made some years ago, and it was amazingly UNsuccessful :lol: at firming up jam. I was thinking about trying it again this year though. I started making jam again this year, and the storebought pectin is expensive!
This is a first, the prices of store bought pectin (and the convenient availability of unripe apples) encouraged me to try, made 4 quarts yesterday, canned 2 for the pantry, the others will be experimented with this week. I am going to attempt jelly from grape and cranberry/raspberry juice I already have and see if they set *fingers crossed*
 
12 quarts of potatoes and 14 pints of salsa. A friend stopped out with marital problems and I handed her a peeler. She felt much better when we were done. And I had a surprise helper!:lol:
 
43 quarts and 4 pints of pickles - 7 quarts of jalapeno dills, 14 quarts of sweet dills, and the rest are sour dills.

Have to go pick up my bushel of peaches later today and probably a bushel of 2nds, to make peach puree and fruit leather with. Good thing I got this far, because I ran out of canning salt.
