WHAT ARE YOU CANNING TODAY?

You know... my smart alec SON said the same thing. :tongue

It is hard to slice a big old long hard carrot with all of the "safety stuff" in place. :P
 
Ouch!!

I was thinking about buying a big bag of bulk onions today. some for my tomato sauce and some for dehydrating.

I am heading to the farm stand for tomatoes again today. That lady must love me by now. Anyways I am doing diced tomatoes today.

I have a good bit of sauce, not finished there but figured I should do some diced.

That's why I own a kevlar mesh glove. I can actually grab stuff and use the mandolin without risking my fingertips.

My own smart-alec son bought it for me as a Yule gift a few years ago so I "would stop cutting myself". It's like this glove.
 
I am so delighted. I packed my sons' lunches this morning and I got to tuck in those little tiny jars of pears I had canned. I am so enjoying canning.
 
This has been our second busy canning day here at PlayStation. We put up 17 pints of green beans, 9 pints of pickles, 16 pints of tomatoes, and a bunch of jelly and jams two weeks ago.

I haven't counted anything but we're kind of tired today so we decided to stop for some lunch. I keep two pressure canners going outside and momma does the cleaning, cutting and packing inside. We usually only do pint jars 'cause we're only two people here and don't eat much at one sitting. I was out looking at our 13 apple trees this morning and it looks like we have a bumper crop waiting for us.

This is today's work so far.
