Lord willing, a bother from church and I will be processing quarts of tomato puree from tomatoes out of our garden after church.

We'll be following this recipe from my wife's canning book. The canning book has seen better days, it's got lots of use over the decades. But I mean the tomatoes aren't gonna jump in jars unless us guys make it happen. I'll post pictures if it happens 😁

We won't be adding any sugar, just salt per the recipe.

We'll see how tomorrow goes on whether or not I will get more
@Mini Horses says that she freezes corn on the cob by just cutting off ends and vaccuum packing... no blanching or anything. I've put about 5 dozen in the freezer that way because it is QUICK.... make sure there are no worms or anything... sure hope they come out cooking up good. I have blanched corn on the cob and it is always tough...

Mom just stuffs the cobs in the freezer as well. She double bags them and really squeezes the air out. She never blanched tomatoes either when I was growing up. Stuffed the whole things in bags. We'd pull a few out and rinse the frozen things with warm water and the skin slipped off.

Yep I second this, exactly how I do both of mine

that works for small amounts, but we've no freezer space and hundreds of lbs of tomatoes. also, i can't imagine Mom being very happy having to skin tomatoes every time she wants to use some in a recipe.

today is going to be a busy day, have to check the tomatoes and pick what are ready and then also check the beans for dry pods.

this afternoon and tomorrow it will be hot enough that being inside canning is going to be ok. i hope i can get the rest of the tomatoes that are ready to be put up done today and not have to drag it into tomorrow. we'll see how it goes...
