we had lunch out today with my brother and nephew at our favorite chinese place. brought home a few goodies. i suspect it might be a challenge to ignore them until tomorrow but i'll give it a try.

Zucchini casserole. Made up. Layered slices of large zuc with sauce mix of fresh tomatoes, can of garbanzos, dried onions, dried tomatoes, 2 home grown japanese eggplants, and spices. Middle layer was precooked sliced sausages and cheddar cheese. Now its in the oven on convection for an hour plus.

I'm really hankering for some chicken salad. Believe that'll be dinner. Have some fresh whole wheat French bread ready!

I had some Ritz topped with goat cheese & home made red pepper jelly last night. Oh, a chicken salad sandwich, too. Cool, filling & tasty.

last night was pretty much whatever leftovers and odd things i could find. so it started with a few slices of ham that was getting old, ice-cream, potato chips, peanuts, cookies, some broccoli with cheese melted on top and a bowl of watermelon.

we have plenty of veggie soup in the fridge but i'd had a large bowl of cauliflower, broccoli and carrot salad to eat over the past week so having finish that yesterday morning for breakfast (along with some chunks of pork loin and cheese potatoes that i thought Mom had eaten up but she hadn't so i got those out and added a few extra prunes because all that cheese is like asking for a cork in the system. overall though i wasn't really worried about not having enough veggies.

now contemplating breakfast and have some Boston Brown Bread to cut up and will probably have a slice of that with some peanut butter.
