DH is having a beef and bean burrito wrapped in a low carb tortilla and topped with lots of cheese and sour cream. He's a happy guy. I wasn't feeling a tortilla, so I had my beef and beans over some cilantro lime rice.

Mom uses romaine lettuce to make little wraps for stuff like that quite often because it reduces insulin needed.

I love lettuce wraps and we have done that occasionally. He is a Tex-Mex food lover through and through, so he loves the low carb tortillas. Not that they're extremely low but at least they don't cause his blood sugar to spike.

Mom's allergic to wheat so it's corn or none. Lots of nice stuff she misses out on

At almost $8 I'll probably never try 'em!

I see they cheaped out and used the xantham gum instead of the more expensive guar gum. Xantham gum causes gastro upset in a lot of people. Mom's one of them. So even though there is a lot of gluten free stuff, she checks for that. Im glad I don't have her dietary issues. She has diverticulitis, too. My oldest brother has some of those issues. Both my youngest brother and I missed out of that

Im glad I don't have her dietary issues. She has diverticulitis, too. My oldest brother has some of those issues. Both my youngest brother and I missed out of that
Is any of that hereditary? (glad you and your brother dodged that bullet!)

Yes it can all be hereditary. Youngest brother didn't dodge the thyroid issues that run in the family. I did as did the other brother. We both got hit with the diabetes issues as well. Mine is just more mild and easier controlled
