DH is having a beef and bean burrito wrapped in a low carb tortilla and topped with lots of cheese and sour cream. He's a happy guy. I wasn't feeling a tortilla, so I had my beef and beans over some cilantro lime rice.

Mom uses romaine lettuce to make little wraps for stuff like that quite often because it reduces insulin needed.

I love lettuce wraps and we have done that occasionally. He is a Tex-Mex food lover through and through, so he loves the low carb tortillas. Not that they're extremely low but at least they don't cause his blood sugar to spike.

Mom's allergic to wheat so it's corn or none. Lots of nice stuff she misses out on

Dang! Talk about a double whammy!

Wonder how these are?

At almost $8 I'll probably never try 'em!

I see they cheaped out and used the xantham gum instead of the more expensive guar gum. Xantham gum causes gastro upset in a lot of people. Mom's one of them. So even though there is a lot of gluten free stuff, she checks for that. Im glad I don't have her dietary issues. She has diverticulitis, too. My oldest brother has some of those issues. Both my youngest brother and I missed out of that

Nothing about that surprises me...

Is any of that hereditary? (glad you and your brother dodged that bullet!)

Yes it can all be hereditary. Youngest brother didn't dodge the thyroid issues that run in the family. I did as did the other brother. We both got hit with the diabetes issues as well. Mine is just more mild and easier controlled

yesterday i made two versions of no bake cheesecake filling (we don't like crusts so we just tuck it away in containers and have it like pudding) one was lemon and the other was lime. i was tempted to make a third of lemon and lime but didn't go that far.

the lime version i used fresh lime juice and since i didn't have a juicer i ended up adapting an old-fashioned ice-cream scoop as the pestle and my hand was the mortar. the first few limes i did by hand and decided that wasn't going to be a good longer term method. after doing enough limes for the recipe i just finished the rest of them and put the juice in a pint jar with some sugar so i will drink it eventually as limeaide (i poured some of this over my lasagna this morning for breakfast as it was a little too dry and... why not? :) ).

dinner last night was a few dark meat part of a rotisserie chicken.

Yum! I'm struggling with my sugar addiction these days. Problem being I promised myself brownies for bad weather preps and I never made them. I feel so deprived, lol!

We had fresh collards straight from the garden last night. Threw a sausage link in with 'em, lots of garlic and onions and had a piece of cornbread under it all to sop up the pot liquor. That was some mighty fine eating with round 2 tonight!

Are you willing to share the recipe? I've been having issues doing a good no bake
