Last night I took some of the pork butt and pulled it into rough chunks. Added a few mexican type seasonings and topped it with a drizzle of the fat that had cooked out of it. I stuck that under the broiler until it was crispy and toasty. Sauteed some onions and bell peppers and wrapped all of the above in a low carb tortilla, added cheese and sour cream. Sliced avocado on the side. Good eating!

i never need an excuse for having dessert first. :)


Leftover bowl of sausage/cabbage/potato.
Had a chunk of steak from last night but ate that for breakfast! 👍

leftovers often make a good breakfast for me too. it is ready and it is there.

i had some coleslaw from yesterday left over so after this morning's tapioca pudding appetizer i finished it off and added some extra hot sauce, peanuts and some beans to it for more pizazz-filler-staying-power-and-cheap-entertainment...

I made pulled pork this morning and put it straight into the freezer. We'll have it when we get home from the trip.

I asked DH what he wanted for dinner and he said tacos. So... We kinda had tacos, but no taco shells. I used mini-sweet peppers as the "taco shells." Pork butt instead of taco meat, sauteed onions/peppers, lotsa cheese and sour cream when it came out of the oven. Yum!
