Drained yogurt would work great. I was originally just going to use cream, but it seamed to need a little zip when I was tasting it so I used cream cheese instead. Sour cream would have also worked.

thanks so much for mentioning that you can make 'yellow cake mix' - i've been dying to make this but have been avoiding the mix too. i wasnt sure if making a yellow cake from scratch would work or not.

I am at the library and don't have my usb disc with recipes on it with me now. I will post this later. Hopefully we will have internet at home soon, because I am not able to keep up with ss at the library. (Very frustrating too! It will take me a month or more to get caught up with everyone) :lol:

actually - we broke down and got a box of cake mix and made that.. OHMIGOSH its soooo good. we made ourselves sick on it last nite!!!!

Good grief! Talk about making a girl wait for a decent recipe!! The cake recipe is from BYC and I liked it. Haven't tried the frosting, but it came from BYC, too, and looks to be good. Enjoy!

Basic Yellow Cake
2 cups all-purpose flour (do not sift the flour)
1 cups granulated sugar
3 teaspoons baking powder
1 teaspoon salt
1 cups milk
Vegetable oil
1 stick butter (not margarine), softened
1 tablespoon vanilla extract
3 large eggs

Preheat oven to 350. Cut wax paper to fit the bottom of (3) 9 x 1 round pans. Spray the pans with cooking spray, place the wax paper in the pans and spray the paper. In a large mixing bowl combine the flour, sugar, baking powder and salt, mixing well. Measure the 1 cups of milk in a 2-cup measuring cupthen add enough vegetable oil to bring the liquid up to 1-1/3 cups. Add the milk/vegetable oil mixture, butter and vanilla to the flour mixture and beat with an electric mixer on medium to medium-high speed for 2 minutes, scraping sides of bowl as needed. Add the eggs and continue beating an additional 2 minutes. Pour batter into prepared pans. Bake at 350 for 20 to 25 minutes or until a wooden pick inserted near center of cake comes out clean, or until cake springs back when touched lightly in the center. Cool cakes on wire racks for 15 minutes; remove from pans and cool completely. Frost as desired.

Cooked Chocolate Frosting
Mix together in a large microwave-safe bowl:
1 cups granulated sugar
cup + 2 tablespoons cornstarch, packed
7 tablespooons cocoa
1 tablespoon butter
teaspoon salt

Stir in with a wire whisk 1 cups boiling water. Cook in microwave on high at 1-minute intervals stirring well after each with the wire whisk. As mixture begins to thicken, cook at 30-second intervals until the mixture is very thick. Then stir in 6 tablespoons of butter and 1 tablespoon of vanilla; stirring until the butter is melted; cool to frosting consistency and frost cake. If you prefer to cook it on the stove just stir the boiling water into the dry ingredients and cook over medium heat stirring constantly until thick and bubbly; remove from heat and add the butter and vanilla.

1 cup dry milk (or eliminate and add 1 1/4 cups milk when making cake)

Mix ingredients into jar or air-tight container. When ready to make cake, add:
1 1/4 cups water
1/2 cup vegetable shortening
1 teaspoon vanilla extract
3 large eggs

Preheat oven to 350F.

Grease and lightly flour a 13 x 9 x 2-inch baking pan (or, two 9 x 1 1/2-inch round pans, or three 8 x 1 1/2-inch round pans). Set aside.

In a large mixing bowl combine the flour, sugar, baking powder and salt, mixing well. Add the milk, shortening and vanilla and beat with an electric mixer on medium to medium-high speed for 2 minutes, scraping sides of bowl as needed. Add the eggs and continue beating an additional 2 minutes.

Pour batter into prepared pan(s). Bake:
13 x 9 x 2-inch cake for 40 to 45 minutes.
9-inch cakes for 30 to 35 minutes
8-inch cakes for 20 to 25 minutes

or until a wooden pick inserted near center of cake comes out clean, or until cake springs back when touched lightly in the center.

Cool the 9 or 8-inch cakes on wire racks for 10 minutes; remove from pans and cool completely on wire racks.

Frost as desired.
