I also grate them, measure into 2 cup packages and toss in the freezer for winter time zucchini bread. And I toss the grated zucchini into soup, stew and chili!

I just made another one, but put it in a casserole dish this time. DH LOVES it and I have LOTS of zucchini! LOL It's so easy to make!
