@CrealCritter - thanks so much for that! I like that idea and it sounds so good. DH is trying to get off caffeine so it's a good thing he likes various teas and always wants to sample a new flavor. I'm a die hard coffee drinker - but only in the mornings. I'll drink tea in the evenings.

For whatever reason - maybe because I'm dreaming of gardens - this recipe sounds so good to me! I think I may have one or two pkgs of shredded zucchini in the freezer. Yum!

I've tried a recipe similar to this, but it didn't have mint in it and I used parmesan cheese.... this might be a fun change.


Zucchini Mint and Feta Fritters
Zucchini, mint and feta fritters are the perfect lunch, dinner, side dish or snack in a lunch box.


Calories 80 kcal
Ingredients
  • 5 medium zucchini grated/shredded
  • 1.8 ozs feta cut into cubes
  • 1 handful fresh mint roughly chopped
  • 2 eggs - medium see notes below
  • coconut oil or butter for frying
Metric grams - US measurements
Instructions

  1. Grate the zucchini and squeeze out all the excess water.
  2. Add the mint, feta and eggs and stir through.
  3. Heat a frying pan and add fry small batches in coconut oil or butter until golden.
Recipe Notes
  • You may need to add extra eggs depending on how large your zucchinis are to hold the fritters together.
  • I use medium 6-7 inch zucchini, which creates about 1.5 - 2 cups shredded each.

I have made something similar to this - but without the spaghetti squash. I take a ready made jar of marinara sauce and put it in a shallow pan, get it heated up and break eggs into it (it's so good with quail eggs!) and simmer 'til the eggs are cooked to your preference. Occasionally I'd stick it under the broiler to finish the eggs. Never thought of using the spaghetti squash - but it sounds delish! Oh - and who says it has to be for breakfast??

Low-Carb Spaghetti Squash Breakfast Nests

Ingredients (makes 1 serving)
  • ¾ cup cooked spaghetti squash (115 g/ 4.1 oz)
  • 2 large eggs
  • 2 tbsp marinara sauce (30 g/ 1.1 oz) - you can make your own
  • 1 tbsp ghee, duck fat or lard (15 g/ 0.5 oz)
  • salt and pepper to taste
  • Optional: crisped up bacon slices, grated cheese, sliced avocado, fresh basil, etc.

  • Cook the spaghetti squash. If necessary, remove any excess moisture by placing the prepared squash in a sieve and squeezing the excess moisture out. Heat a pan greased with ghee over a medium-high heat. Once hot, divide the spaghetti squash into 2 parts and place on the pan. Using a fork, create two "nests".

  • Crack an egg into each of the nests, lower the heat to medium and cook for 5-7 minutes or until the egg white is opaque and the egg yolk is still runny. Season with salt and pepper to taste.

  • When done, remove from the pan using a spatula and serve with marinara sauce. Optionally, top the eggs with fresh basil and serve with crisped up bacon slices, sliced avocado, or add some grated cheddar cheese (top with grated cheddar cheese and place under a broiler for 3-4 minutes or until the cheese is melted).

FEM, that fritter recipe looks awesome! I'm going to post a link to it on the zucchini recipe thread (for summer when we're all swamped with the stuff) ;)

Who cares? It's delish, lol. But carbs....darn those carbs :( But, with some "other" type of noodle.... there's possibilities here! ;)

Those muffins look delish! Got a recipe for those?

Yep I just poked the wife until she squealed then got a little mad and gave me the recipe.

Mix a bunch of scrambled eggs in a bowl, add cheddar cheese, green onion, spinich and bacon bit. Scoop into some weird kind of reusable muffin things, bake @ 350 for 30 minutes or until when a wooden toothpick comes out clean. She said about the wooden toothpick how you check to see if a cake is done, whatever that means.

Now I gotta put away dishes so I hope the recipe is a good one
