I bet the difference between good goat and bad goat: The feed it's raised on, the skill of the processor, and the way it's cooked.

DH talked with the brother of the neighbor with dogs , who said he would pass our complaint along to their dad (our actual neighbor). Know what I heard last night? Silence. It was lovely.

Gotta go grind some pork... fun.

Are you making sausage - or just grinding it? I have a tendency to just grind it because I can always add spices if I want sausage.

Did he get the goat done too?

Just grinding it. I use ground pork in place of ground beef, and season it as sausage as needed.

Goat is hanging outside, hoping we'll get that started today too but not sure.

Awesome for three less mouths to feed. How big was the wether...he was a mini, right?

He was a one year old mini, he was about the size of a small Nigerian. The minis have a serious 18month to 2 year growth spurt! He was a stocky little thing though!

I can't wait for you to try him. I have an issue though when I butcher something...I don't want to eat it very soon. I need to put it in the freezer and 'forget' who it used to be before I chow down on it, lol.

All the cuts we're keeping (not many) are wrapped, the meat to be ground is in the fridge until after dinner when we get around to grinding (or tomorrow, is quite likely lol).
