The bacon explosion was rockin' awesome!
I left out the bacon bits on the inside because I thought it might come out too salty.
My meatloaf:
-lean ground beef
-lean ground pork
-breadcrumbs
-bell pepper
-onion
-steak rub
-2 eggs
-Sweet baby ray's barbecue sauce

J was actually whimpering while he ate it.

BBH....I have to say... :bow to that bacon explosion recipe.
I made this tonight...and hubby and I sat around for over an hour after dinner, moaning and holding our tummies. No, we were not sick from the recipe... we were MISERABLE, from eating too much!!

I wish I could take credit for the bacon explosion, but it was Ldychefy2k (bless her heart!) that posted the bacon explosion recipe. ;)

I have cooked (on my smoker) (and eaten) the Bacon Explosion. That is why I flunked my stress test today, have to go see my heart Dr in the morning.
Do NOT blame the bacon, or the ground meat or the cheese. Saturated fat does not cause heart disease. Sugars, starches, fruit juices, and high fructose corn syrup do. Also add hydrogenated fats, vegetable oils like corn or soy to that list.

Stop dissing the bacon!!!

I get touchy when people blame their health issues on bacon. Bacon is one of the perfect foods in my book! :D

(Other perfect foods include butter from grass fed cows, well aged cheeses, and coconut cream - no sugar added of course!)
