I made these today and they came out fantastic. They aren't dense like brownies, more cake like...but still GOOD!

Butter Nut Squash Brownies

They are the healthiest brownies that you will ever eat. My kids love them! They sound weird but they are pretty good. I dont like them warm, they taste better cold.


1 C nut butter (peanut, almond, roasted cashews, pecan)
C honey
tsp baking soda
1 egg
3 4 T cocoa
C cooked butternut squash mashed until smooth
C chopped walnuts or pecans (optional)
Mix ingredients well. Pour into greased baking pan, bake at 350 for 25-30 minutes

OOh, I can make those too. I have all the ingredients in the house, except I'll substitute pumpkin. *runs outside to get a pumpkin out of the rain* :weee

Wow, you could eat the entire batch and have a serving of veggies and a protein (egg) and all that good nut butter.....sounds like a great breakfast to me! :p

I forgot to get the pumpkin when I went outside to feed the critters :lol:
It is cold and wet out there. I'm not going out again til it's time to lock the chickens up. Hopefully I'll remember to bring the pumpkin in then.

The possibilities are endless aren't they? Pumpkin, zucchini, carrot...

Two thumbs up from everyone here at my house. I had to hide the tray so we could savor them all weekend.
