Please forgive me :bow I have lurked enought that I should have known better. Here you are:

1 gal green tomatoes, chopped fine
1/2 gal onions, chopped fine
1 gal cabbage, chopped fine
Sprinkle 1/2 c canning salt over vegetables and let stand overnight. Drain off water, Add enough weak vinegar to cover. Add 1 qt brown sugar, 2 or 3 sm red peppers (chopped fine), 1 Tbsp mustard seed, 1 Tbsp mixed pickle spice. Cook until all is tender. Water bath for 10 min

This is good on more than just beans.

Thank you, thank you! You are forgiven ;) I may have to scale down your recipe a bit. So, what else do you enjoy this on? I think it would be fun just announcing: "Tonight, we are eating chow-chow!"

Another way to enjoy/sneak in beans: Tacos! To extend our taco meat, I do about 1/3 meat, 1/3 whole beans (or they could be refried as mentioned above) and 1/3 cooked brown rice. It makes for really nice flavor and texture plus is way lower in fat and cost, way higher in fiber.

Ladies there was talk of Chow Chow on a pickle thread earlier in the summer.
