It doesn't look pretty, because the fat goes to the top so you have to scrape it off....but I don't care, it tastes great cold on bread with ketchup! It also makes a little broth, which is actually quite yummy. So it slides right out of the jar, because it shrinks a bit.

Of course, all the canning books say to boil whatever you've canned for 20 minutes before eating it....who does that? Yup, cold right out of the jar!

When we butcher a cow, we have the burger made so lean I can barely make gravy! I don't think the fat would be a problem!

Cook for 20 minutes?
I have a friend that cans zucchini bread, he don't cook it for 20 minutes before he eats it! He's still alive!(I think, haven't talked to him in awhile)
Moms pickle recipe does not call for the water bath, some people freak over that! I've been eating them for XX years now!

I don't have a pressure canner yet. So can't help you there, but others have already done that.
I do put the grapeleaf in the pickle jar, I don't know if it helps that much. Refrigerator pickles come out great though, kind of like Vlasic's or is it Claussen's? except better. They are pretty easy to make too. No canning.

Love your wicked sense of humor. Know what you mean about having to comb your hair to go to town. ;) I have to get dressed when going out in public.

I got my recipe here: www.canningusa.com I loved the videos when I first got my canner, and watched them more than once. So much nicer than reading those instructions over and over with all the warnings scaring the carp out of me!

Flour and processed grains break down in the canning process. Think about what would happen to oatmeal if you pressure cooked it for an hour and a half....glue! You don't really need the binders anyways, because the pressure canning seems to be all that is needed to make the meat pack together and form a "loaf."

Oh, comb your hair? Don't you gals own a hat? :D

Yeah I wear hats and I wear my hair in a ponytail. But I still got to wash the dirt smudges off my face and put decent and clean clothes on. I even have to do that to work in the front yard, so I don't work in the front yard very often. We live on a busy street and when I'm out there in some skimpy and sloppy outfit, someone I know invariably drives by and honks at me. Like SO's aunt and uncle, who don't think very highly of us as it is and live around the corner. Or someone I am hoping will help me get a job :rolleyes: :gig

I have already gotten a few good ideas here!
Freemotion has made me hungry and the talk of pickles forced me into getting into one of the last few jars I have left!

Can I use any kind of grape leaves? I have a few different kinds growing around here.

Come on Freemotion, I have to at least comb my hair, I'm old, it's the only good asset I have left! If I cover it with a hat, people might notice my clothes are falling apart! (mainly because I don't want to comb my hair to go clothes shopping!)

My recommendation, get the canning stuff out, checked, and start canning. I started slow and now I can up a storm. I do greenbeans and other things out of the garden as well as jams.

To be honest, I am considering digging a deep hole and burying all my canning stuff!
I told Mr. Not so nice, about this place and all the different SS things people do! I told him about all the different things Freemotion cans!
He says, "you can do that"!
He started listing all the things his friend cans, and says "you can do that". He even told me I can go spend a day canning with his friend and learn more! (yea, comb my hair to spend a day with someone who grates on me like sandpaper?)
THEN, he started in on all my chicks I have running around! "I" could start butchering them instead of selling them!
Not once did I hear the word "we"!
Oh wait, I did hear the word "we", once! We should get bees? I don't think he even likes honey, why would he want bees?

Keep in mind, we had just been discussing which fields I will be working on this summer! I have fences to fix, fences to take out, fences to put in. I have logs and stumps to take out! I have mowing, discing, tilling to do! I haves weeds to pull and spray! I have firewood to cut! Add in the garden, the house, the barnyard critters and what ever else comes up and now he wants me to do what?
What happened to can a few veggies, maybe some stew?
